Gurkensalat – Cucumber Salad

On these hot summer days, one of my favorite German recipes to make is this one, a refreshing, creamy yet light cucumber salad.

Gurkensalat – Cucumber Salad

1 cucumber, thinly sliced
salt

Marinade:
1/2 cup plain yogurt
1 small onion, finely chopped
1 clove garlic, minced
2 tsp. white vinegar
2 Tbsp. vegetable oil
2 Tbsp. freshly chopped herbs (such as: parsley and dill, or chives and oregano)
pinch of sugar
salt, pepper to taste

1. Thinly slice the cucumber. Then salt the cucumber slices and let rest for about 20 minutes.
2. Mix together the yogurt, onion, garlic, vinegar, herbs, sugar, salt and pepper. Mix in the vegetable oil.
3. Drain liquid released by the cucumber slices, then stir into the yogurt marinade. Taste for seasoning and add more salt and pepper if needed.
4. Chill, then serve.
